Cauliflower a la importancia (Breaded cauliflower in a mushroom sauce). 🛒 Ingredients (serves 4): 🔸 1 cauliflower (1.2 kg / 2 1/2 lb, unpeeled) 🔹 300 g mushrooms (10.7 oz) 🔸 1 onion 🔹 2 garlic cloves 🔸 600 ml vegetable broth (2 1/2 cups) 🔹 80 ml white wine (1/3 cup) 🔸 20 saffron threads 🔹 1 tablespoon wheat flour (17 g / 1 1/2 tbsp) 🔸 Salt 🔹 Chopped fresh parsley Battering for the fried cauliflower: 🔸 3 eggs 🔹 Flour 🔸 Salt, pepper 🔹 Oil for frying 🍳 Breaded cauliflower recipe, step by step Step 1: 1️⃣ Place the saffron threads in a glass with a couple of fingers of warm water (between 40-50ºC / 104-122ºF). Let them infuse until ready to use. 2️⃣ Clean the cauliflower. Cut it into medium florets (cut large florets in half). Cook it in a pot with boiling water and a little salt for about 10 minutes. Drain and let cool. 3️⃣ Meanwhile, wash the mushrooms and slice them. In a low pot, sauté the mushrooms over medium-high heat with a little olive oil. When they're almost ready, season them with salt and pepper. Set aside. 4️⃣ Finely chop the garlic cloves and onion. In the same pot, add a little more oil and the chopped garlic. Cook over low heat, and when they begin to brown, add the onion and a pinch of salt. When the onion is sautéed, add the flour and cook for a couple of minutes. 5️⃣ Pour in the white wine, let it evaporate slightly, and add the broth. Stir until the flour is completely incorporated and let it reduce and thicken for about 15 minutes. Set aside. 6️⃣ Coat the cauliflower florets in flour and beaten egg (season the latter with salt and pepper). Fry them in a saucepan with plenty of oil. Remove them from the pan and place them on absorbent paper. 7️⃣ Return the pot with the sauce to the heat over medium-low heat. Add the saffron infusion and mix well. Add the cauliflower and the mushrooms on top. Cover and cook for about 5 minutes.
