Instagram: / nglaisui Business Inquiries: https://wa.me/6287857625750 Recipe Book Purchase Link: https://shopee.co.id/nglaisuishop Ou Kue (Talam Taro and Shrimp Cake) Typical of Medan =================== Recipe from the book: "VARIOUS SNACKS & TYPICAL MEDAN Cakes" By @nglaisui =========== Ingredients (A) ========= 400g (net weight) Peeled taro, cut into small cubes, steam until half cooked (10 minutes) 350g Rice Flour 100g Hunkue Flour (grade 1) 100g Tapioca Flour Tani -1500ml Coconut Milk from 1 coconut -1 tbsp Granulated Sugar -1 tsp Ash Water/Khi Water (usually used for noodles) (optional) -2 tsp Salt (to taste) -Ground Pepper to taste -1 tsp Powdered Stock Ingredients (B): For the Topping: ==================== -200g Ebi Shrimp, soaked, drained, then roughly chopped -100g Minced Meat -100g Roughly Chopped Shallots -50g Roughly Chopped Garlic -7 Red Chilies, Cut into Thin Rounds -Sufficiently Chopped Spring Onions & Celery -Soy Sauce, Sweet Soy Sauce, Oyster Sauce, Powdered Stock, Pepper Powder, Sugar & Salt to Taste -Fried Onions to Taste Method How to make: (A) =============== 1* Take 1/2 of the steamed taro + 700ml coconut milk in a blender and blend until smooth, then pour into a bowl. Add rice flour, hunkue flour, tapioca flour, sugar, salt, pepper powder, and stock powder. Stir well. 2* Cook the remaining coconut milk until boiling, then pour it into the flour mixture and stir until smooth. Add the ash water and stir well. Pour into a greased 22cm baking pan and arrange it with the remaining taro on the bottom of the pan. 3* Steam for 45 minutes until cooked through over high heat in a preheated steamer. 4* Once cooked, remove from heat and sprinkle with ingredients (B). Let cool before cutting. How to make (B) ================ 1* Sauté the shallots and garlic until fragrant, then add the shrimp and sauté until golden brown, then add the minced meat. Stir, then add all the seasoning ingredients while stirring. 2* Add a little water, stir again and taste the flavor first. Once it's just right, remove from heat and let it cool before adding the chopped red chilies. 3* Stir, then sprinkle over the mixture (A) until evenly coated.
