Din Tai Fung charges sixteen dollars for garlic green beans made with only six ingredients. So I tracked down the training materials DTF uses to teach their kitchen staff. The two that matter most: a two-stage garlic system that uses garlic oil and fresh garlic as separate ingredients, and a preserved vegetable called zha cai.
