St Louis ribs in Borniak Smoker 150
St Louis Ribs are one of my favourites off a smoker, usually I would cook these on a charcoal grill for a few hours at 140c, with a chunk of cherry wood for smoke. But I wanted to see how the Borniak Smoker 150 would get on with the ribs. This is an electric smoker, using an electric element to maintain heat, but with smoking wood chips that are pushed across a further electric element to create delicious smoke. There is plenty of room in this large smoker for a lot of food, and it's ideal if you want to smoke a lot of racks of ribs, you can really load it up. With these ribs I used beech smoke which is delicious, dusted the ribs with James Lowe butcher dry rub, smoked and finished with a glaze of sweet maple syrup. Although they didn't have the pretty "bbq lipstick" of a smoke ring, the beech smoke was delicious and the ribs were incredibly tasty, juicy and perfectly cooked.
