LENTIL SOUP (Serves 4-6): 4 Vegan Sausages (I used Wheaty Oriental Sausages) 2 Carrots 1 Onion 1 Celery Stick 1 400g can of Diced Tomatoes 200g Raw Lentils 1.25L Water 1 Vegetable Stock Cube 1/2 tbsp Herbs 2 Bay Leaves Olive Oil Salt & Pepper Pinch of Chili Powder 👉🏼 Simmer for 30 minutes, add the browned sausage pieces and continue cooking for another 10 minutes. VEGAN PHILADELPHIA CHEESE: 3 soy yogurts (plain, unsweetened) 1 tsp onion powder (optional) 1 tbsp chives (optional) Salt Place a cheesecloth or clean cloth in a colander, then place the colander over a bowl. Pour in the yogurt and cover with the edges of the cheesecloth or cloth. Let drain in the refrigerator overnight. Once drained, transfer to a bowl, add the onion powder and salt, mix, and that's it :) PEAR BAVAROIS CAKE (6 people): 200g Oats 200g Dates (I used Medjool) 3 Biscoff (or substitute with a pinch of ground cinnamon) 1 splash of Water if needed 600g Natural Plant Yogurt 200g Pear 4 or more tablespoons Maple Syrup 6g Agar Agar Powder 1 tsp Vanilla Extract 1 tsp Lemon Juice Let rest for 24 hours in the refrigerator and garnish with maple syrup and walnuts FLUFFY VEGAN PANCAKES: 180g Wheat Flour 150ml Soy Milk Vanilla flavor 1 tbsp Baking Powder 1 tbsp Applesauce 1 tbsp Maple Syrup 1 tsp Vanilla Extract 1 tsp Lemon Juice 1 tbsp Rum (optional) 👉🏼 For the banana version, coat the banana slices with the pancake mix, removing any excess before browning them for 1 minute on each side in a lightly greased skillet over medium heat.
