Caribbean Oven Roasted Chicken.

In this recipe we'll oven roast a chicken, with elements of the Caribbean. fresh herbs, spices and a little heat from the pepper and you know it's going to be the most delicious oven roasted chicken you've ever prepared. As a golden rule you can roast your chicken about 20 minutes per pound. I ended up roasting mine for about 1 hr and20 minutes. note, on some islands in the Caribbean we refer to roasted chicken as baked chicken.
