Published June 23, 2022 Pickled ginger is usually made from very young ginger with pink tips that can cause the ginger to turn pinkish. Some commercial ones contain food coloring and chemicals. This recipe only contains 3 ingredients including the ginger. It has a very long shelf life (usually 6 months or more) and is usually eaten with sushi but some people put it in salads, seafood and meats.
