On one hand, the program visits the Consortium of Red Cows in Emilia-Romagna: an ancient cattle breed that was at risk of extinction in the 1980s (with just 600 animals remaining) and which today, thanks to passionate young breeders, has returned to approximately 4,000 animals, whose milk is used to make the original Parmigiano Reggiano. On the other, it introduces the Maschio Gaspardo factory in Pordenone, where cutting-edge agricultural machinery is produced: 10-meter harrows, GPS-guided precision seeders, and even an autonomous UV-light robot capable of reducing the use of pesticides by over 50%. Rounding out the episode is Traditional Balsamic Vinegar of Reggio Emilia DOP, produced using methods that have remained unchanged for over a thousand years and aged for at least 12 to over 25 years.
