Easy Way of Canning Tomatoes
Don’t be intimidated by canning your tomatoes. This is the way my mama canned hers and I have been using this method for years. A lot of people use pressure canners now and that’s find for them. You do what you are comfortable with. Instructions on water bath canning tomatoes. Preheat jars by sterilizing in hot water. Keep jars hot until ready to fill with tomatoes. Heat a big boiler of water to boiling Cut a cross slit in bottom of tomatoes. Drop tomatoes in hot water. Leave about 2-3 min. Take out of hot water and drop in ice water. Peeling should slip right off. Core tomatoes and cut up as desired. Using a big stock pot, bring tomatoes to a rolling boil. Ladle tomatoes into hot jars..add 1/2 teaspoon salt and 2 tablespoons lemon juice into each jar. De bubble and wipe rim of jar with clean Cloth . Place lid and ring on jar, finger tight. Place jars in canner. Cover with water. Bring to a rolling boil. Boil 20 minutes. Remove from heat.
