Deep-Fried Glutinous Rice Balls with Sesame (or Sesame ball) is a very popular snack in China. It has different names in different regions of China (Ma Qiu. Ma Tuan or Jian Dui). It is a type of fried pastry made from glutinous rice flour. The pastry is filled with red bean paste inside and covered with sesame seeds on the outside, with a crispy shell and a soft and sweet interior. Ingredients: Glutinous rice flour 250g Red bean paste 160g Sugar 10g Sesame 20g Recipe: 1 Place 250 g of glutinous rice flour in a bowl and add 10 g of sugar. 2 Slowly pour in 140-150 ml of water and mix well. 3 Knead the dough well by hand. 4 Divide the dough into 16 even portions (about 25g per portion) 5 Divide 160g of red bean paste into even 16 portions (about 10g per portion) 6 Use your hands to knead the dough into a ball and then press it into a round piece with your hands. 7 Place the red bean paste in the middle of the dough sheet and wrap it up. 8 Place it in a bowl filled with sesame seeds and allow the dough ball to be coated with sesame seeds. Gently press the surface of the dough ball with your hands to make the sesame seeds stick more firmly. 9 Turn the gas on to low and pour in enough cooking oil to submerge the sesame balls. 10 Slowly put the sesame balls into the oil. 11 Keep the oil at around 100°C. Slowly stir the sesame balls so that they are heated evenly; fry for about 10 minutes. 12 When the sesame balls start to float, turn the gas down to medium heat and bring the oil temperature up to about 160°C. This temperature will harden the surface of the sesame balls; 13 Keep stirring the sesame balls to heat them evenly. 14 Continue frying for about 5-8 minutes until the surface of the sesame balls and the sesame seeds turn golden brown, then remove and serve.
