Frijoles Colorados Guatemaltecos
INGREDIENTS PART 1: 1 pound of red kidney beans 1 1/2 pounds of beef short ribs 1 large onion 1 head of garlic Salt to taste PROCESS: --- Wash everything and cook in a pressure cooker. NOTE: If you double the ingredients, you can cook the meat first and then the beans using the same amount of water for a better flavor. --- Once cooked, save some of the beans with the onion and garlic. This will be used to blend them in the next step. INGREDIENTS STEP 2: 1 oz sesame seeds 1 oz pepitoria pepper 1/2 guaque or pasilla chile, seeded PROCESS: --- Heat a pan and brown or roast these three ingredients one by one and set aside. INGREDIENTS STEP 3: 1 red bell pepper 4 tomatoes 2 miltomates or tomatillos 1/2 white onion 6 garlic cloves PROCESS: --- Place everything in a hot pan to roast. --- Once roasted, remove from the pan and wait for it to cool. --- Place all the above ingredients in a blender and blend very well (add water if necessary). --- Add the blended ingredients to the beans already on the heat. --- Let it boil for 10 minutes. INGREDIENTS STEP 4: Salt Pepper Oregano Cilantro PROCESS: --- Add salt, pepper, and oregano to taste. --- Add the cilantro. --- Let it boil for approximately 20 minutes. --- Ready to serve and enjoy.
