Today I’m sharing a gentle spring day at home here in Portugal 🤍 A slow rhythm of baking, time in the garden, and quiet everyday moments. Thank you for being here, whether you’re new or have been part of this little community for a while 🤍 🫐 Quick & Easy Blueberry Muffins A simple, no-fuss recipe for soft, golden muffins — perfect for slow mornings at home. Time: Prep: 10 minutes Bake: 15–20 minutes Makes: 8 large or 10 standard muffins ( Turned mine into a cake) 🌿 Ingredients • 195g plain flour • 150g sugar (plus a little extra for the tops) • ¼ tsp salt • 2 tsp baking powder • 80ml neutral oil ( I used Olive oil or avocado oil) • 1 large egg • 80–120ml milk • 1½ tsp vanilla extract • 150–200g blueberries (fresh or frozen) 🍂 Method 1. Prepare Preheat your oven to 200°C (180°C fan). Line your muffin tray with paper cases. 2. Mix the dry ingredients In a bowl, gently whisk together the flour, sugar, baking powder, and salt. 3. Mix the wet ingredients In a jug, combine the oil, egg, milk, and vanilla. Stir until smooth. 4. Bring it together Pour the wet mixture into the dry ingredients. Gently mix until just combined — don’t overmix. Fold in the blueberries. 5. Fill & bake Spoon the batter into your muffin cases. Sprinkle a little sugar on top for a soft, golden finish.
