Șarlotka: prăjitură cu mere și budincă de vanilie | Apple cake with vanilla pudding | Dulcinele 🍏

Szarlotka… Have you ever heard of this cake? (not to be confused with the Romanian charlota, meaning a dessert of my childhood, a kind of vanilla pudding, which my mother made me as a child, in the early '90s, if I remember correctly). In Russian cuisine there is a fluffy cake with apples, but the Polish version is enhanced with vanilla pudding and the dough is tender and melts in the mouth. This special cake is super refreshing, flavorful and extremely easy to make. ⭐ Cake batter (23x35 cm tray): 350g (2 1/2 cups) plain flour 1 1/2 teaspoons of baking powder a pinch of salt 1 teaspoon of vanilla extract (or vanilla sugar) 70g (2/3 cup) powdered sugar 200g (¾ cup + 2 tablespoons) butter 1 medium egg ⭐ Vanilla pudding ingredients: 750ml (3 cups) full fat milk 1 vanilla pod 3 medium eggs 80g (3/4 cup) caster sugar 45g (6 tablespoons) cornstarch 75g (1/3 cup) butter ⭐ Apple filling ingredients: 1kg (around 2 lbs.) of green apples 3-4 tablespoons white sugar a little bit of cinnamon (1/2 teaspoon) ⭐ powdered sugar for serving I hope you like my recipe and I hope you give it a try.
