Carolina Breakfast Casserole -Perfect for Christmas Morning! Plus, you can make it the day before!

Carolina Breakfast Casserole 3 cups croutons 1/4 cup butter, melted 3 cups shredded cheddar cheese, divided 12 slices of bacon, chopped and fried 1 bell pepper, diced and par-boiled 1 small onion, diced and par-boiled 6 eggs 1 3/4 cups whole milk 1 Tablespoon prepared mustard salt and pepper to taste Preheat oven to 325°. Spray a 9” x 13” baking dish with nonstick spray. In a small saucepan, boil the diced pepper and onion for about 3 to 5 minutes. Or you can microwave the onions and peppers with a small amount of water for 3 to 4 minutes. Drain well. Place the croutons in the bottom of the dish. Drizzle croutons with melted butter. Sprinkle 2 cups of the shredded cheese over the croutons. Layer on the cooked and crumbled bacon, green pepper, and onion. Whisk the eggs and milk in a large bowl. Add the mustard, salt, and pepper; whisk again. Pour the egg mixture over the ingredients in the baking dish. Sprinkle with the remaining one cup of shredded cheese.
