For home use, you can ask for scraps, as the packages they sell are enough to make 20kg of chorizo. However, if you have any leftovers, you can keep them frozen without any problem). REMEMBER: The meat should always be very cold, but not frozen; this is important for a good chorizo. You can ask the butcher to grind these cuts for you; it's much easier and saves a lot of time.
