Räscha -- a traditional Hutterite comfort food | how to make it
How to make and enjoy what I think is the ultimate comfort food. #Hutterite #comfortfood I know the recipe is big but, making it smaller is not my strong point and I don't what to accidentally make a mistake and you having to deal with said mistake. Räscha 6 quarts milk 3 quart water 2 1/2 lbs butter 2 lbs tallow or shortening 9 1/2 cups sugar 18 eggs 1 cup salt 1 heaping cup yeast 43 Ibs. flour sifted 1 tbsp. baking powder Soak yeast in water, let stand. Cream butter, crisco and sugar till fluffy. Add eggs and mix till combined. Add remaining ingredients and knead 10 minutes. let rise for 2 hours or until mixing bowl is full. Cut dough into 3/4 lbs. pieces, roll and shape into buns. Press one on top of the other. Bake at 250 for 15 minutes, then reduce heat to 225 and bake for 45 minutes. take buns out of oven and gently break apart and let cool well. Cut stripes in buns. Put back in oven and dry at 150. Once they're dry and you want more color, leave in oven for 15 to 20 minutes at 225. but be careful and watch closely or they'll get too dark.
