RECIPE: Chicken and Stuffing Casserole with Thighs Ingredients: 4 bone-in chicken thighs 1 box Stove Top stuffing 1 1/4 cup water 1 (10oz) bag of frozen mixed veggies salt and pepper to taste 1 tsp paprika 1/2 tsp garlic salt 5 tablespoons butter, unsalted and divided Directions: 1.) Preheat oven to 375 degrees. Grease a 7x10" casserole dish with butter. 2.) Prepare the stuffing using the water and 2 tablespoons of the butter. Remove from heat and stir in the frozen veggies. 3.) Transfer the stuffing veggie mix to the casserole dish and spread evenly. 4.) In a large mixing bowl, melt the remaining 3 tablespoons of butter. Add the paprika, garlic salt, and pepper and stir. Using thongs, dip each chicken thigh into the butter mixture. Coat both sides of each thigh and then set each on top of the stuffing mix. 5.) Bake the casserole uncovered for 45 minutes to 1 hour. Serve immediately. **Double the recipe to serve 8. Use a 13x9" dish.
