Making Boreal Birch Syrup 2.0 We produce birch syrup in Thunder Bay, Ontario, Canada, tapping over 500 trees each Spring. This video shows the step-by-step process for making birch syrup from the sap of white birch trees. The process is similar to that of maple syrup making, however, it takes much more sap, time and effort to produce birch syrup.
