Nonno Ennio from truckdriver to drummer now great homecook.He shares His PASTA with PRAWN & ZUCCHINI

Nonno Ennio Traina born in Fondi, Province of Latina, LAZIO 75 year old Ennio came to Australia very keen and excited to see what the future would hold. He is very happy with his life in Australia, he worked hard as a truckdriver, was a drummer in a band called Black Hand and wears his CARABINIERI uniform for special events in both Australia and Italy. Now a carer for his wife he loves to cook alongside her in their kitchen in Sydney. He also still works as a forklift driver! He loves to make gnocchi but today he is showing us his other specialty dish with is Liguine with Prawns and Zucchini. RECIPE: Linguine con gamberi e zucchine - Fettuccine with prawns and zucchini Serves2-4 180g linguine 1 zucchini, sliced into rounds 200g prawns, frozen or fresh Splash white wine (about ¼ cup) ½ punnet cherry tomatoes, cut in half ¼ red onion, sliced Olive oil, 3-4 tablespoons Pinch of dried oregano Pinch of dried parsley Pinch chilli Salt Light brush the zucchini rounds on both sides and grill until golden Fill a large pot with water, add salt and while it is coming to the boil prepare another pan to cook the In another pan heat oil add in the prawns and cook for a few minutes in each side before adding the wine Add in the cherry tomatoes as well as the onion Add some salt and pepper, oregano and parsley and chilli (optional) Once the pasta is cooked add it to the prawns along with a few ladles of pasta water Combine well and serve with the zucchini on the top and a drizzle of olive oil Thanks for watching please SUBSCRIBE to my channel where we showcase a new nonno each fortnight.
