Instructions: Finely chop the chestnut mushrooms, soak the dried porcini, then blitz both together. Cook the mushroom mix in a pan with salt, pepper, thyme, and a splash of sherry until dry. Sear the beef fillet on all sides and let it cool. Spread pâté over the beef, lay Parma ham on cling film, spread the mushroom mix over the ham, place the beef on top, and wrap tightly into a log. Chill until firm, then wrap in puff pastry, seal, chill again, and bake until the pastry is golden and the beef reaches your preferred doneness. Let it rest before slicing.
