Nougat Cake - my favorite | Raluca Gheorghe • Prăjitura Nuga - preferata mea | Raluca Gh... Ingredients: 2 wafer sheets (35cm*40cm I had) 6 egg yolks 6 egg whites 2x100g sugar 200g butter/margarine 100g flour 200g chopped walnuts 200g rasat vanilla sugar/essence 1/2 sachet baking powder First, prepare the yolk cream. Melt the butter or margarine in a double boiler and add 100g sugar and the 6 egg yolks. Stir continuously for about 5-7 minutes, until the yolk is cooked and the cream thickens. You can add essence or vanilla paste if you like. While the cream is cooling, turn on the oven to 180 degrees, let it heat up and start making the middle of the cake. Beat 6 egg yolks with a pinch of salt until foam begins to form, then add 100g of sugar in two batches and continue beating until the sugar melts and you get a glossy meringue. Chop the walnuts and add them to the egg whites, as well as the raatul (small cubes) and the flour mixed with baking powder. Mix everything with wide movements from the bottom up until you get a homogeneous paste. Pour the mixture into a baking tray lined with baking paper and place in the oven for approximately 12-15 minutes. When it's ready, let it cool completely on a rack before removing the cake from the tray. Once the top has cooled completely, we can assemble the cake. We put a sheet of wafer, on which we spread half of the yolk cream, place the top, press down a little and put the second half of the yolk cream, level it as before and cover with the second wafer sheet. Press well and let it sit overnight with a weight on top. After about 8-10 hours we can portion it as you prefer.
