Spiced Wine Bread 500g medium-strength W220 flour 350g spiced wine 10g salt 125g sourdough starter To infuse the red wine: For the 350g we need: 1 clove 2 allspice stalks Half a cinnamon stick 2 cardamom sticks Half a star anise A pinch of ground nutmeg 60g brown sugar Zest of half an orange and half a lemon Place the wine in a saucepan with all the spices, heat until it reaches 70 degrees, no more, cover, and leave until the next morning.
