In this video, we’ll guide you step-by-step through the process of making authentic sarma. 📋 Ingredients for Sarma: ✓ 20–25 pickled cabbage leaves ✓ 1 cup white rice ✓ 10 slices bacon ✓ 3.5 pounds ground beef ✓ 100 grams lard or 1 cup oil ✓ 2 tablespoons minced garlic ✓ 1 teaspoon salt ✓ 1 teaspoon paprika ✓ 1 teaspoon pepper ✓ 3 eggs ✓ 2 large onions Instructions: 1. Prep the Ingredients: Dice the onions finely. Cut the bacon into small pieces. Mince the garlic. 2. Cook the Filling Base: Heat a frying pan over medium heat. Add the bacon and cook until golden brown and crispy. Add lard (or oil) and let it melt. Stir in the diced onions and sauté until translucent. Add minced garlic, followed by pepper, paprika, and salt. Stir well and cook for about a minute. Add the ground beef and mix thoroughly until combined. (The beef doesn’t need to fully cook at this stage.) Remove from heat, transfer to a bowl, and allow the mixture to cool. 3. Combine the Filling: Once the mixture has cooled, add the eggs and rice. Mix until everything is well combined and set aside. 4. Roll the Cabbage: Trim the thick core from each cabbage leaf. Place a leaf in the palm of your hand like a glove. Add an appropriate amount of filling to the leaf, fold in the sides, and roll tightly from the bottom up. Repeat until all the meat mixture is used. Ingredients for the Sauce: ✓ 50 g lard or ½ cup oil ✓ 1 ½ tablespoons flour ✓ 1 teaspoon of paprika ✓ 8 oz tomato paste ✓ 4 cups of water ✓ 1 teaspoon salt ✓ 1 tablespoon sugar ✓ 1 teaspoon black pepper Make the Sauce: 1. Heat the frying pan over medium heat and melt the lard (or heat the oil). 2. Gradually stir in the flour, paprika, sugar, salt, and pepper. 3. Add the water while stirring continuously. Lower the heat and mix well. 4. Stir in the tomato paste and cook until the sauce thickens slightly. Assemble and Bake: 1. Pour the sauce evenly over the rolled cabbage in a baking dish. 2. Add enough water to submerge the rolls completely, if necessary. 3. Cover the dish with foil. 4. Preheat the oven to 360 ° F and bake for 2½ hours.
