Sweet Yakon Harvest
Yacon (Smallanthus sonchifolius) is a root vegetable native to the Andes Mountains in South America that has become popular in Indonesia. Although called a "tuber" (ubi), it has a crunchy, watery texture similar to a pear or jicama. Because it is sweet and refreshing, it is often eaten raw like fruit or juiced.
