TRADITIONAL THAI RED CURRY CHICKEN with Vipa

It's a joy and privilege to have shared an evening of Thai hospitality and specialities with our good friend Vipa and her husband Greg, and now to be able to share some of her fabulous recipes with you, Taste Buddies! In episode 1 here, Vipa takes us through a traditional Thai red curry chicken, with tips on how she's substituted the ingredients that are (almost!) impossible to get outside of her native Thailand. It was interesting for us to learn that, even in Thailand, the majority of cooks use a commercially made paste, as there are just too many ingredients and it's too time-consuming and faffy to make. Bit like tomato puree for us I guess! So, with our conscience soothed, we reach for the commercial stuff too.... with no guilt! By nature, most Thai curry pastes are gluten-free, but if you do have a gluten intolerance, check out the label to be on the safe side.
