This tutorial will show you how the broth clarification process is done as well as how to make a rarely seen Escoffier garnish called the Royales . Royales are made out of a savoury custard which is flavored with broth and other ingredients. after what it is poured in individual moulds ( usually dariole moulds) and then cooked "au bain marie". The Royales are then cut in various shapes and served as a garnish for many types of consomme.
