When you first meet him defeat as many troops as you can, the 2nd time you see him defeat two of his sub officers as they're in roughly the same place. What you need to do is make sure his morale isn't at 8 otherwise his troops will steamroll your main camps defenses and then you'll have to babysit Zhuge Liang for the rest of the stage.
