Cordoban Mazamorra (Almond Salmorejo) 🛒 Ingredients (Serves 4): 🔸 200 g of day-old breadcrumbs (ideally Cordoban telera bread, but any dense-crumbed bread will do. I used a wheat-based loaf) (7.1 oz) 🔹 200 g of raw almonds (7.1 oz) 🔸 1 clove of garlic 🔹 100 ml of extra virgin olive oil (1/2 cup) 🔸 20 ml of vinegar (I used sherry vinegar) (1 tbsp + 1 tsp) 🔹 Salt 🔸 500 ml of water (150 ml for soaking the almonds + 350 ml for blending) (2 cups) To accompany: 🔹 1 chopped hard-boiled egg 🔸 Black olives 🍳 Traditional Cordoban Mazamorra Recipe, step by step: 1️⃣ Soak the almonds in 150 ml of water (½ cup + 2 tbsp) for 1 hour. This will make them softer, easier to blend, and result in a creamier mazamorra. If you want to soak them longer, put them in the refrigerator. 2️⃣ Peel the garlic clove, cut it in half, and remove the germ; this will make it more digestible. 3️⃣ Remove the crust from the bread and use 200 g of the crumb. Cut it into pieces and put them in a large bowl. Add the soaked almonds with their soaking water, the vinegar, the garlic clove, a little salt, and another 150 ml of water. 4️⃣ Blend with your immersion blender until you have a thick but smooth cream. Gradually add water as needed to reach your desired consistency. I ended up using 500 ml of water. 5️⃣ Now, slowly drizzle in the olive oil while continuing to blend, to emulsify. Adjust the salt if necessary. 6️⃣ Cover the bowl and refrigerate before serving (it's served cold). 7️⃣ You can serve it in the most traditional way, with chopped egg and black olives. 👌 Note for preparing Mazamorra Cordobesa: 💚The mazamorra tends to thicken as it cools.
