Wort, that fantastic liquid we create during the course of a brew day, only turns into beer thanks to the magic that yeast brings to the equation. Yeast, being a living organism needs food and oxygen to survive. The Food is the sugar that’s extracted from malt during the mashing process. Oxygen is something we as brewers need to infused into the liquid.
