Ingredients For the Sushi Rice: 220g uncooked rice 190g water Sushi Rice Seasoning: 4.5 tbsp rice vinegar ½ tbsp sugar 2 pinches salt For the Fried Tofu (Aburaage) Pockets: 5 pieces of fried tofu (aburaage) Seasoning for Tofu Pockets: 4 tbsp mirin 1 tbsp soy sauce 1 tbsp sugar 200ml water Instructions 🔹 Prepare the Rice: 1. Rinse the rice and cook it with 190g of water. 2. Once cooked, transfer the rice to a bowl. 3. Mix the vinegar, sugar, and salt, then add it to the rice little by little while mixing. 4. Fan the rice to cool it down. 5. Divide the rice into roughly 10 equal portions. 🔹 Prepare the Tofu Pockets: 1. Take 1 piece of fried tofu and pat it with a paper towel. 2. Roll a chopstick over it to loosen up the pocket. 3. Cut it in half and gently open each one—this will give you 2 pockets. If they’re hard to open, roll the chopstick over them again. 4. Repeat for all 5 tofu pieces, making 10 pockets in total. 🔹 Cook the Tofu Pockets: 1. Place all the tofu pockets in a pan, overlapping slightly. 2. Mix the mirin, soy sauce, sugar, and water in a bowl. 3. Pour the sauce over the tofu pockets. 4. Gently press down on them to remove air from the pockets. 5. Cover and simmer over medium-low heat for 10 minutes. 6. After 10 minutes, spoon the sauce from the pan over the tofu pockets. 7. Continue cooking until most of the liquid has evaporated. 8. Turn off the heat and transfer the tofu pockets to a plate (they can overlap a little). 🔹 Assemble the Inari Sushi: 1. Lightly squeeze the tofu pockets to remove excess liquid. 2. Fold the top of each pocket backward halfway to make filling easier. 3. With wet hands, take a small amount of sushi rice and gently stuff it into the pocket. 4. Fold the top to seal the rice inside. Start with the back, then right, left and finally front. That’s it! These are perfect for bento boxes, work lunches, or a quick snack.
