Mix ingredient 1 (chili powder and hot water) until it forms a paste. 2. Chop the 2 ingredients (galangal, lemongrass, coriander root, garlic, shallot, dried shrimp, shrimp paste, lime leaves, and chili paste) until smooth. 3. Sauté the ground spices until dry and the color turns slightly dark. 4. Add the shrimp stock and whole cayenne peppers. Bring to a boil. 5. Season with salt, sugar, tamarind water, lime juice, and pepper. Stir well. 6. Add the straw mushrooms, fish balls, shrimp, and squid, cook until done. 7. Serve sprinkled with coriander leaves. ...
