Palm honey is a product deeply rooted in the culture of the people of La Gomera and throughout the island. Palm honey (a cultural treasure for the people of La Gomera and a vital economic sector for the island) is made exclusively from the sap (guarapo) of the Canary Island date palm and is the queen of La Gomera's cuisine, used in desserts and cocktails or as an accompaniment to various dishes. Palm honey is the most evident and striking representation of the close connection the inhabitants of La Gomera have maintained with the palm tree, creating a genuine culture associated with this tree. With its intense flavor, its origins date back to the 18th century, and the same production methods are still used today.
