RIDGE GOURD CHUTNEY INGREDIENTS 100 gms. peels of ridge gourd few curry leaves 1 tsp. cumin seeds ¼ tsp. mustard seeds 4 tbs. oil 12 cloves garlic 2 pieces of red chilli 11/2 green chillies 6 small pods of tamarind 1 tsp. salt 1/4 tsp. chilli powder ¼ tsp. turmeric powder Few mint leaves sprigs of coriander METHOD Heat oil, add piece of red chilli, mustard seeds and cumin seeds. When they crackle, add curry leaves, 8 garlic cloves, green chillies, peel of ridge gourd and salt. Cover with a lid and cook for a few minutes. Remove the lid and add tamarind, sesame powder, mint leaves and coriander leaves. Cool and grind the mix. Heat oil, add piece of red chilli, mustard seeds, cumin seeds, few curry leaves and 4 crushed garlic. Saute’ for a minute and add turmeric powder, chilli powder and the chutney mix. Shut the flame, mix well and allow to cool. Store in a glass/porcelain jar. NUTRITION It is rich in dietary fibre and moisture hence good for digestion.
