Comedores escolares: La revolución de la nutrición comienza en las aulas | EL PAÍS

The cook at the El Grau public school in Valencia, Victor Miralles, is an example of how hundreds of enthusiastic chefs rack their brains every day to ensure children learn to eat healthy, varied, and sustainable foods. The 2021/2022 school year is coming to an end, and the way we feed children during the holidays must reflect on Miralles's reflection, which has given many thoughts to how to teach children to eat well, with everything and with organic, local, and seasonal products. "A child who repeats a meal is a triumph," explains Víctor Miralles while peeling and chopping potatoes in the kitchen of the El Grau public school in Valencia. "A child who leaves food on their plate is like a failure for them," he continues, while adding the pieces of root vegetables to a large pot where he has been cooking a pile of broccoli, previously sautéed in extra virgin olive oil, for a long time. "How do we fix that? By giving them very little, but always allowing them to have as many seconds as they want." She pauses to say this last bit. She smiles. She's thought a lot about how to teach children to eat well, with everything and organic, local, and seasonal products.
