The name of the dish is Chomlek and it is typical of the city of Bansko, which is one of the best ski areas in Europe. The recipe : 2 kilos of veal shank cuted into slices. 1.5 kg. potatoes 1 kg. onion 1 head of garlic 2 bay leaves 20 black peppercorns 2-3 grains of allspice 400 ml. White wine 5-6 tablespoons of vegetable oil salt to taste Preparation method 1. Peel the potatoes and cut into large chunks. Place half of the potatoes in the bottom of a clay pot. Put half of the chopped onion on top. 2. The shank is salted and seasoned with ground black pepper. Put it in the pot. 3. Add the remaining potatoes and onions. Season with bay leaf, black peppercorns, and allspice. Pour white wine into the pot. Add whole garlic cloves, half of which are unpeeled to lighten the flavor of the dish. Pour in the oil and close the pot with a lid. The lid of the pot can be “glued” with a sticky dough of flour and water to preserve the flavors. Put in a cold oven and heat to 150 ℃.
