Hello everyone, this is Kumiko Ibaraki. Today, I'd like to introduce a cheese terrine recipe that I've been making for over 20 years, a simple way to bake our family's cheesecake in a loaf pan. Traditionally, cheese terrines are high in calories and fat, using plenty of cream cheese and heavy cream. However, by using yogurt, you can make it with less than half the calories and less than one-fifth the fat. The recipe is very simple. You'll need to do a little preparation to drain the yogurt, but once you've mixed everything together, just pour it into the pan and bake. It's so easy that it fits in the oven in just 10 minutes. This cheese terrine will satisfy you with the refreshing aroma and rich flavor of yogurt. I plan to upload it around 5 PM today. Thank you for your support. 1/6 slice: 121kcal, 4.3g fat [Ingredients] 18 x 8 x 6cm loaf pan 200g strained yogurt (strain 400g plain yogurt) 20g sugar 25g rice flour (Mizuho Chikara bread flour or confectionery flour) 40g honey or corn syrup 2 medium eggs 150ml milk or soy milk (room temperature) 2 pinches of salt A suitable amount of vanilla oil [Preparation] Line the pan with parchment paper. Prepare a water bath. Drain the yogurt the day before. Use a weight to reduce 400g to about 200g. Preheat the oven to 170℃. [Instructions] 1. Put the strained yogurt in a bowl, add the sugar and honey or corn syrup and mix. Add the rice flour and mix. (If the corn syrup is hardened, heat it in the microwave for a few seconds to soften it before mixing.) 2. Add the medium eggs one at a time, mixing well after each addition. Pour in the soy milk or milk, add the salt and vanilla extract, and mix. 3. Pour the mixture into the mold. Place in a preheated oven and bake in a water bath at 170°C for 50-60 minutes. If it doesn't brown, bake at 190°C for about 5 minutes until it browns. 4. Insert a bamboo skewer; bake until it comes out clean. 5. Let it rest in the refrigerator overnight or longer.
