Today I prepared a Sea Urchin Rice Bowl topped with a huge amount of uni 🍚 And also Sweet Shrimp and Yukhoe (Korean beef tartare made with 2++ Hanwoo — the highest grade of Korean beef!) 😇 Let me tell you, the combination of sweet shrimp, uni, and Hanwoo is so good, you could say it’s a trio so good someone could drop dead while eating and no one would even notice… it's that good!!! Right now in Korea, purple sea urchins are in season! It wasn’t fishy at all, just incredibly rich and creamy. As soon as it touches your tongue, it melts like snow and that sweet, savory flavor just explodes... It was tearfully good! 👍🏻The sweet shrimp were plump, chewy, and sticky in the best way, and had a natural sweetness that was absolutely amazing! (In Korean, they’re literally called “sweet shrimp” because of that!) And the yukhoe — not tough at all, just packed with deep, nutty flavor ❤️ The whole time I was eating, I couldn’t tell if I was dreaming or awake... I was just so happy and grateful for the food.
