Sourdough Babka - A Triumph Of Deliciousness

For the dough: 150gr 100% hydration ripe sourdough starter 90gr milk 390gr flour (160gr plain, 230gr strong-ish 00 flour, more on this below) 2 small eggs 55gr sugar 1/4 tsp vanilla 60gr butter a pinch of salt For the filling (what I used, but you can do whatever you want!): A jar of Nutella A bunch of high quality dark chocolate chips For the syrup: 30gr water 40gr sugar FLOUR The aim is to have a flour mix with some strength (in some countries marked as W, otherwise check the protein content). A good value is W200-220 or around 11-11,5gr proteins. I use also some double-0 flour, so that also the grind is quite fine, which results in a better texture.
