Knusprige Stäbchen zum Knabbern

In this video, I'll show you how to easily make delicious breadsticks. We'll start by making the dough, and then, of course, we'll bake them. Ingredients for approximately 20-25 breadsticks Pre-dough Starter 300g Tipo 0 or 550 wheat flour 150g water 1g active dry yeast Main Dough Starter 30g cold water (60% total hydration) 1g active dry yeast 6g salt 25g olive oil Preparation Pre-dough Starter: Combine the water, flour, and yeast in a bowl and mix roughly. Cover the starter and let it stand at room temperature for 12-16 hours. Main Dough Starter: Combine all ingredients except the water and salt in a bowl and mix for about 5 minutes. Then add the salt and gradually knead in the water. Knead until the dough passes the windowpane test. ... Cover the dough and let it rise at room temperature for about 1-2 hours. After rising, divide the dough into 20g pieces. Shape each piece into a ball, then roll it into a log in intervals. Allow the dough to rest for a few minutes between each roll. Place the logs on a baking sheet lined with parchment paper, cover them, and let them rise again at room temperature for 60 minutes. Meanwhile, preheat the oven to 200°C (390°F) using the convection setting. Bake the breadsticks on the middle rack of the oven for about 20-25 minutes, or until crispy. Then let the breadsticks cool on a wire rack. My name is Jürgen Einfalt. I live in the beautiful Allgäu region of Germany and am a passionate home pizza maker and baker.
