I'm Deh Werneck, an amateur cook and former MasterChef contestant, and in today's video I came to visit the confectionery of Mateus Rosa, also a former MasterChef, accompanied by the wonderful Franklin Bin, runner-up in the professional edition! Mateus Rosa's confectionery is an explosion of creativity and Brazilianness. There is no fixed menu of sweets here, the display window is what rules! We tried a little bit of everything: we started with the cheese pie with pineapple and bacon, which is a childhood recipe from Mateus, and a sausage roll with Dijon mustard and sesame seeds. Everything was made with ingredients that enhance Brazilian cuisine. Then, we went straight to the desserts! The jabuticaba entremet with jelly and mousse made with white chocolate brought acidity and freshness. Franklin said that he loves jabuticaba and that this dessert is one of the house's favorites. But the most impactful moment was the tasting of the chocolates: I ate one with passion fruit and cachaça, another with persimmon and one with caramel and spices. Guys, it's pure art!
