Flan de courgettes

If, like me, you're short on ideas for cooking zucchini, I suggest you try zucchini flan. It's a kind of zucchini terrine that can be enjoyed both cold and warm. I must admit, straight from the fridge, it's a light and very refreshing dish. Zucchini flan is incredibly easy to make; simply pre-cook the zucchini and, most importantly, season it well before incorporating it into a mixture. Here, I'm offering a version with a Provençal twist, using herbes de Provence, but you can vary the spices by adding, for example, curry or cumin. You can also add bacon or diced ham. It's cooked in a bain-marie, which results in a wonderfully moist flan with a golden-brown top and perfectly white sides! Before unmolding, refrigerate for a few hours to allow it to set properly and prevent the zucchini flan from collapsing.
