Jobfish / Otu Otu / Highway fish {Catch Clean Cook} Steamed Fish over Sweet Rice (Maug, CNMI)

While fishing around the North side of Maug, I caught the biggest Jobfish I've ever seen!!! Back in 1997 was the last time I ate a green Jobfish. I was on a boat near Qamea, Fiji and I remembered it as one of my favorites! As soon as I caught this fish, I knew exactly how I wanted to cook it!!!
