Whether it's for festivals, special occasions, or just to satisfy your sweet tooth, this step-by-step guide will help you make the perfect Boondi Ladoo every time! Portion servings: 6-7 pax Preparation time: 05 hrs Cooking time: 50 mins Ingredients: For sugar syrup: Water 2 cups Sugar 1 cup Saffron 10-12 strands Green cardamom powder ½ tsp Ghee 1 tbsp For boondi batter: Besan 3 cups Water as required to maintain the consistency Yellow food colour Green food colour Oil for frying Method: Step 1: Make the Sugar Syrup Start by heating water in a deep pan. Add sugar and stir it in till it dissolves completely. Let it boil for a few minutes. Once it thickens slightly, drop in a few saffron strands, a pinch of cardamom powder, and a spoon of ghee. Cook until it reaches one-string consistency – when you press the syrup between your fingers, it should form a single thread. Turn off the heat and keep it warm. Step 2: Prepare the Boondi Batter In a mixing bowl, take besan (gram flour). Add water gradually and mix well to form a smooth, flowing batter – it should not be too thick or too watery. Make sure there are no lumps. Divide the batter into two small bowls. Add yellow food colour to one and green to the other for that classic festive look. Mix them well. Step 3: Fry the Boondi Heat oil in a kadai on medium flame. Take a slotted spoon or boondi jhara and hold it a few inches above the oil. Pour a ladleful of batter and gently tap or rotate the spoon – tiny drops will fall into the oil and puff up into boondis. Fry just for a few seconds – we want them cooked but still soft, not crispy. Remove and drain on paper towels. Repeat the same process with the coloured batters. Step 4: Soak Boondi in Sugar Syrup While the boondi is still warm, add it directly to the warm sugar syrup. Gently mix so every piece soaks up that syrupy goodness. Let it sit for about 10 to 15 minutes. This step makes the boondi soft, juicy, and ready to bind. Step 5: Shape the Ladoos Once the mixture is slightly cool but still warm to touch, grease your palms with a little ghee. Take a portion and press it gently into a round ladoo.
