In this video I take you on a truly authentic experience: a dinner in a luxury restaurant in Svalbard, where I had the chance to discover the real cuisine of this remote archipelago at the edge of the world. This is an extreme place, where the harsh climate and the total absence of agriculture have always influenced daily life and, of course, the local cuisine. Once upon a time, the inhabitants of Svalbard relied exclusively on the resources offered by wild nature: fishing, hunting and what could be preserved to survive the polar winter. Today, with the importation of ingredients from all over the world, modern cuisine has become more similar to that of other parts of the world, but some culinary traditions still resist, and are deeply linked to the history of this unique place. Many of you have asked me to show you the most authentic part of Svalbard, and that is exactly what I tried to do with this experience. However, I want to emphasize that my goal is to tell a culture and a tradition that are part of the history of these islands, and not to promote unsustainable or controversial practices. Here everything has a reason linked to survival, and understanding it also means better understanding life in such an extreme place.
