Caramel Cheesecake I Bake with me I How to make a caramel Cheesecake

I'll admit, it's time consuming... but well worth it! I hope you give it a try! crust 1 1/2 cups cookie or graham cracker crumbs 2 tbs sugar 1/4 cup melted butter Mix well (should be the consistency of wet sand) and press into bottom of the pan with your fingers or use a cup. place crust in pre heated 350 degree oven for 10 mins. Let cool while making filling. Filling 4 packages cream cheese 1 1/4 cups sugar 3 tbs corn starch 2 tsp vanilla 3 eggs 1 egg yolk 1 1/2 cups sour cream 2 tsp lemon juice Mix cream cheese with sugar very well. Make sure there are no clumps of cream cheese, it may take a few mins. Mix in corn starch, vanilla, sour cream and lemon juice, combine very well. Mix in eggs one at a time, and then egg yolk. Try not to over mix while the eggs are in, just until combined. It will cause the egg whites to make your cake rise too much and might make it crack. Place a roasting pan, cookie sheet or whatever you have that will hold the spring form pan, and allow you to add water to it. I just use a cookie sheet and replace the water if it gets dry. Put the cake in the pan and add your water. Oven should be preheated to 350, cook for 15 mins, then turn the oven down to 325 and bake for 1 1/2 hours. Turn off oven, don't open the door and let it sit there for an hour. Take it out... it should be jiggily it'll look like it's not done, but it is. Let it rest for about 15 mins and then run a butter knife around the edge so while it's cooling it doesn't pull from the sides and crack. Once it's cooled completely let it rest in the fridge for 8 hours. Caramel Topping You can make this up the night before as well, it's not hard, but it is time consuming. lol 1 can of sweetend condensed milk. Remove the label and place in a stock put full of water. Boil for 4 hours.. yes you heard me right, 4 hours turning the can half way at the 2 hour mark. Make sure to replace water every so often so it's always covered. Remove from water and let cool completely. Open with a can opener and If your cheese cake is ready spread on top, or place in a bowl and store in fridge till you're ready to put on the cake.
