Channel Mentions: ‪@AnnsSouthernhome‬ Zucchini Boats Preheat oven to 400 degrees Slice zucchini in half, oil flesh side, bake for 15 minutes, let cool and scoop out the flesh. Melt 2 tbsp butter in a sauce pan add the cooked zucchini flesh, 1 1/2 cups dry stuffing mix, 1/2 sour cream, and 1/2 cup cheese. Heat together about 2 minutes until stuffing is soft, then fill the zucchini boats with the mixture, top with a little more cheese and bake for 15 minutes.
