Spend a gentle July day with me in England, where the pace slows, the garden is full of life, and simple seasonal traditions take centre stage. This week, I prepare a refreshing raspberry and fresh mint iced tea, perfect for warm summer days, before baking a light Wimbledon Cake inspired by one of Britain's most cherished summer traditions. Along the way, I share a little of the cake's history and how it has evolved over the years. Later, we enjoy a peaceful walk through the beautiful Hampshire village of Broughton, discovering quiet riverside paths, historic buildings, and the quiet beauty of the English countryside. Back at home, I spend some time in the garden, making the most of the welcome change in temperature after one of the hottest weeks of the year. With love, Maria 🤍 Raspberry & Mint Iced Tea — What You'll Need: 🌿 • 500 ml boiling water • 2 black tea bags (or loose black tea) • 4–6 fresh mint leaves • About 250 g raspberries, halved to release more flavour • 1 teaspoon of honey (or your favourite sweetener) 🍰 Wimbledon Cake 3 large eggs 3 tablespoons sugar (or your favourite sweetener) 3 tablespoons natural yoghurt 1 teaspoon baking powder 160 g self-raising flour 🍓 Strawberry Syrup & Filling (Jam ) About 500 g strawberries 2–3 tablespoons sugar (or sweetener) 1 tablespoon lemon juice 1 teaspoon vanilla extract ☁️ Prosecco Cream 500 ml double cream (you used extra thick double cream) About 80 ml Prosecco 2–3 tablespoons sugar (optional, to taste)    / @hercosybritishjourney   Subtitles are available in over 20 languages — just turn them on in the settings.
