[Anchor Commentary] While delivery and cooking robots have been increasingly used in the restaurant industry, automation of the entire restaurant process has been limited. However, a Korean startup is attracting attention by developing an "unmanned kitchen" technology that automates the entire cooking process. Reporter Baek Ga-hye has a look. [Report] Clams, oil, vegetables, and noodles rotate in a pan to create a delicious vongole pasta. This space, which looks like an ordinary kitchen, is actually part of an "unmanned kitchen" system that automates cooking. Last month, startup Creo Korea opened a restaurant in Seongdong-gu, Seoul, and piloted its self-developed unmanned kitchen system, Eight Kitchen. The system, which cooks main dishes like pasta and risotto, is powered by a server, and even the cleaning process is automated. [Interview – Kim Hong-beom / CEO of Creo Korea] This system aims to automate the entire process, from portioning and dispensing ingredients, to transporting and cooking, to packing and cleaning the food after cooking. Because everything from hardware design and development to software development is handled in-house, we were able to create an integrated system... We examined the fully automated cooking system we developed. Ingredients are portioned and delivered to the cooking station, where sauce is added and then cooked using an electric pan. After the precise timing, the finished dish is placed on a plate, where a high-temperature water jet sprays the electric pan to complete the sterilization and cleaning process. This rapid, automated cooking process allows us to handle the high volume of delivery orders. We are currently working on automating the order processing phase, and we are nearing the completion of a kitchen that requires virtually no human intervention. Creo Korea previously developed Yessup, a HACCP management system required for establishing smart factories in the food industry. We have also achieved innovation in the food tech sector, developing and distributing large-scale food waste disposal systems. Based on our experiences with these two projects, the current autonomous cooking system was able to be introduced into kitchens. In this era of fierce competition, robotics companies are rushing to enter the food tech business. With the entire company handling everything from technology development to store operations, the realization of fully automated restaurants is expected to become possible.
