I'm sharing the process of assembling and decorating my T-Rex cake! And below I'll answer some frequently asked questions... Where do I get the structure? I design and assemble the structure myself, using threaded rods and wooden boards (or MDF) based on a scaled image of the dinosaur. All the structure and its non-edible elements are insulated with different materials to prevent direct contact with the food. What kind of dough do I use for decorating? Commercial sugar paste (or rolled fondant), from the Pasta Ballina brand (in Argentina). What kind of sponge cake do I use for carving? Traditional sponge cake made with eggs, sugar, flour, and liquid, which can be milk or water. I don't use sponge cake made with butter, oil, or any other fat. I moisten it before filling with a syrup made with sugar, water, and vanilla extract. What fillings does the cake have? Dulce de leche and Pastelar brand commercial buttercream are both fillings that don't require refrigeration and remain safe and stable at room temperature for extended periods during assembly and decoration. What tool do I use to smooth the ganache? It's called a flexible spatula (which is also used to smooth and join fondant), but it can be replaced with a piece of acetate or some other type of thin, flexible plastic material.
