#cooking #tacos #mexicanfood #vanlife #tacotuesday Join this channel to get access to perks:    / @takingajourney_  \ Chicken Fajitas (Skillet Method) Ingredients : Chicken thighs Olive oil Chili powder Onion powder Garlic powder Fajita seasoning Ground cumin Fresh lime juice Bell peppers (red, yellow, green, orange — any combination you like) ¼ red onion 1 white onion ¼ yellow/sweet onion (optional) Instructions Season and marinate the chicken Drizzle the chicken thighs with olive oil. Season generously with chili powder, onion powder, garlic powder, fajita seasoning, ground cumin, and fresh lime juice. Rub the seasoning evenly over the chicken. Place the seasoned chicken in the refrigerator and let it marinate for 15–30 minutes. Cook the chicken Heat a skillet over medium heat and add a small amount of olive oil. Place the chicken thighs in the skillet and cook for 3–6 minutes per side, until browned and cooked through. Remove the chicken from the pan and set aside to rest. Cook the vegetables In the same skillet, add the sliced bell peppers and onions (red, white, and/or yellow). Season with the same spices used for the chicken. Stir and cook until the vegetables are softened and slightly translucent. Slice the chicken After resting a few minutes, slice the cooked chicken into strips. Combine and finish Add the sliced chicken back into the skillet with the vegetables. Cook together for 2–6 minutes, stirring occasionally, until everything is heated through and well combined.
